The addition of these extra ingredients in noodles makes Indo-Chinese noodles even more delectable. - Fresh chowmein noodles – yakisoba or dry thin spaghetti are great subsurfaces.
- Vegetables – celery, cabbage, matchstick carrots, garlic, green onions, ginger.
- Seasoning – Low sodium soy sauce, oyster sauce, sesame oil, sugar.
- Chicken Breast – Chicken thighs will also work great, cooking just a few minutes. You can skip the chicken if you are making it as a side dish.

How do you make Chinese chowmein?
- Prepare noodles according to the instructions on the package.
- Mix soy sauce, oyster sauce, sugar, and sesame oil together in a bowl.
- Heat oil in a pan or a large and deep non-stick pan on medium-high heat.
- Chicken pieces in the skillet for ChowMein.
- Add chicken (working to leave a little space between the pieces so that they turn brown) and cook 3 – 4 minutes.
- Cook until cooked for about 2-3 minutes and continue.
- Transfer to a plate or sheet of foil.
- Sauce the vegetables in a pan for the chowmein.
- Reduce heat slightly, add remaining 1 tablespoon oil to skillet, add celery and sauce for 3 minutes.
- Add cabbage and sauté for 2 minutes, then add carrots, green onions, garlic and ginger and 1 – 2 minutes longer, until the vegetables are all crisp.
- Toss in the noodles and chicken, then pour the soy sauce mixture over it and toss to coat. Serve hot

What is the best type of noodle for chowmein?
Dry thin spaghetti is a good choice, with a neutral flavor
and is very easy to find.
- Yakisoba is my choice. They are found in refrigerated packaged food in the production section of some grocery stores (I buy the Fortune brand at Kroger).
- Fresh chowmein noodles (Hong Kong style noodles) are a good choice, but they are available in the US. Are hard to find. They are available at some Asian grocery stores. Honestly though I like Yakisoba better because they don’t taste mildly sour and they are not greasy.
- Dry Spaghetti. I’ve used it and it works great here too. It has a neutral taste and uniform texture. Regular or thin will work.
- Dry chowmein noodles (not to mention crispy crackers) will also work. I haven’t tried this option yet, so I couldn’t give my opinion, but I equate it to the spaghetti option (but made with wheat flour vs semolina).

Can I use other vegetables?
I love the classic vegetable mix here, but you can
definitely swap in a few, in which you may already get bean sprouts, mushrooms,
vine paper, snow peas, or water chestnuts.
Do I have to use oyster sauce?
Don’t worry about tasting the dish prepared like the oyster
from the sauce, it just gives a nice depth of flavor.
When there is no one in my fridge I have used hoisin sauce in it, so if you insist on leaving it, go with hoisin. They taste very different but either will add rich savory flavors.
